Effects of fat content and fatty acid composition of Nagara River ayu on its quality as a food ingredient

چکیده
Ayu (Plecoglossus altivelis) living in the Nagara River Gifu Prefecture were caught at three sites upstream,midstream and downstream to test fat content fatty acid composition edible portions. In lower reaches, fished twice, summer (from June August) fall (October).
